Summer Squash Curry

INGREDIENTS

  • 3 yellow squashes
  • 2 medium sized zucchini
  • ½ onion, chopped
  • ginger-garlic paste, or 2 cloves garlic grated, and 1/2 nub ginger grated
  • 1 teaspoon each of cumin seeds, cumin powder, coriander powder, and turmeric 
  • ½ teaspoon of red chilli powder
  • 1 tablespoon avocado oil
  • Cilantro for garnish

INSTRUCTIONS

  1. Cut all the squash into small cubes.
  2. In a wok or skillet heat the avocado oil and add the cumin seeds.
  3. Once they sputter add the chopped onion and ginger-garlic paste, stir and allow the onions to soften(about 5 minutes). 
  4. Add cumin powder, coriander powder,  red chilli powder and  turmeric. Sprinkle in some salt. Mix for about 30 seconds of until fragrant. 
  5. Stir in the squash. Reduce flame to medium and cook for about 5-10 minutes or until the squash has reached desired tenderness. Serve by itself or over rice and garnish with fresh cilantro.
