Sweet Potato Breakfast Bowl
Ingredients
- 1 large sweet potato
- 1 teaspoon of maple syrup
- ½ mashed banana
- Dash of cinnamon
- 2 tablespoons raisins
- 2 tablespoons chopped nuts
- 2 tablespoons almond butter
Instructions
- Preheat oven to 375 degrees. Poke the sweet potatoes with a fork multiple times and wrap them in aluminum foil. Bake for about an hour. Let the sweet potatoes cool for about 5 minutes. Cut open or peel cooled sweet potato and lightly mash with cinnamon, maple syrup, and mashed banana. Top with raisins, chopped nuts, and almond butter. Add any other healthy toppings if desired.
Notes
Sweet potatoes are full of fiber, antioxidants, Vitamin A, potassium (for blood pressure), and cancer protective ingredients. A very healthy potato, indeed!
