Sweet Potato Breakfast Bowl

Ingredients

  • 1 large sweet potato
  • 1 teaspoon of maple syrup
  • ½ mashed banana
  • Dash of cinnamon
  • 2 tablespoons raisins
  • 2 tablespoons chopped nuts
  • 2 tablespoons almond butter

Instructions

  • Preheat oven to 375 degrees.
  • Poke the sweet potatoes with a fork multiple times and wrap them in aluminum foil.
  • Bake for about an hour.
  • Let the sweet potatoes cool for about 5 minutes. Cut open or peel cooled sweet potato and lightly mash with cinnamon, maple syrup, and mashed banana.
  • Top with raisins, chopped nuts, and almond butter. Add any other healthy toppings if desired.
