Sweet Potato Breakfast Bowl
Ingredients
- 1 large sweet potato
- 1 teaspoon of maple syrup
- ½ mashed banana
- Dash of cinnamon
- 2 tablespoons raisins
- 2 tablespoons chopped nuts
- 2 tablespoons almond butter
Instructions
- Preheat oven to 375 degrees.
- Poke the sweet potatoes with a fork multiple times and wrap them in aluminum foil.
- Bake for about an hour.
- Let the sweet potatoes cool for about 5 minutes. Cut open or peel cooled sweet potato and lightly mash with cinnamon, maple syrup, and mashed banana.
- Top with raisins, chopped nuts, and almond butter. Add any other healthy toppings if desired.
