Sweet Potato Brownies

INGREDIENTS 

  • 1 cup mashed sweet potato
  • ⅔ cup maple syrup
  • ½ cup nut butter
  • 1 tsp pure vanilla extract
  • 1 ½ Tbsp avocado oil
  • ½ cup cocoa powder
  • ¼ tsp sea salt
  • 1 tsp baking powder
  • ⅔ cup whole wheat (or gluten-free) flour
  • (optional) ½ cup chopped nuts + chocolate chips

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potato, maple syrup, nut butter, vanilla extract, and avocado oil. Stir until smooth and well-blended.
  3. Add the oat flour, cacao powder, sea salt, and baking powder. Mix until a thick, scoopable batter forms.
  4. Line an 8×8-inch baking dish with parchment paper.
  5. Spread the batter evenly into the prepared dish using a spoon or spatula.
  6. (Optional) Sprinkle the top with chopped pecans and chocolate chips for extra crunch and richness.
  7. Bake on the center rack for 28–32 minutes, or until the edges look set and a toothpick inserted in the center comes out mostly clean.
  8. Remove from the oven and allow to cool in the pan for 30 minutes to 1 hour.
  9. Once cooled, lift the brownies out of the pan using the parchment paper, slice, and enjoy!
