Sweet Potato Brownies

INGREDIENTS
- 1 cup mashed sweet potato
- ⅔ cup maple syrup
- ½ cup nut butter
- 1 tsp pure vanilla extract
- 1 ½ Tbsp avocado oil
- ½ cup cocoa powder
- ¼ tsp sea salt
- 1 tsp baking powder
- ⅔ cup whole wheat (or gluten-free) flour
- (optional) ½ cup chopped nuts + chocolate chips
INSTRUCTIONS
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed sweet potato, maple syrup, nut butter, vanilla extract, and avocado oil. Stir until smooth and well-blended.
- Add the oat flour, cacao powder, sea salt, and baking powder. Mix until a thick, scoopable batter forms.
- Line an 8×8-inch baking dish with parchment paper.
- Spread the batter evenly into the prepared dish using a spoon or spatula.
- (Optional) Sprinkle the top with chopped pecans and chocolate chips for extra crunch and richness.
- Bake on the center rack for 28–32 minutes, or until the edges look set and a toothpick inserted in the center comes out mostly clean.
- Remove from the oven and allow to cool in the pan for 30 minutes to 1 hour.
- Once cooled, lift the brownies out of the pan using the parchment paper, slice, and enjoy!
