Sweet Potato Pumpkin Mousse
Ingredients
- 2 large or 4 small sweet potatoes baked and mashed or one 15 oz. can drained sweet potatoes
- 1 15 oz can PURE pumpkin
- ¼ cup honey or pure maple syrup
- ½ tsp pumpkin pie spice
- ½ tsp ground cinnamon
- 2 cups vegan whipping cream
Instructions
- Puree baked sweet potatoes (in processor or blender) until smooth. Do not overmix.
- Add in pumpkin, honey and spices, and blend until smooth.
- Fold in whipping cream and gently mix.
- Pour into bowls and refrigerate for 30 minutes.
- Serve and enjoy!
