Sweet Potato Pumpkin Mousse

Ingredients

  • 2 large or 4 small sweet potatoes baked and mashed or one 15 oz. can drained sweet potatoes
  • 1 15 oz can PURE pumpkin
  • ¼ cup honey or pure maple syrup
  • ½ tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • 2 cups vegan whipping cream

Instructions

  • Puree baked sweet potatoes (in processor or blender) until smooth. Do not overmix.
  • Add in pumpkin, honey and spices, and blend until smooth.
  • Fold in whipping cream and gently mix.
  • Pour into bowls and refrigerate for 30 minutes.
  • Serve and enjoy!
