Sweet Potato Tortillas

INGREDIENTS

  • 1 medium sweet potato, baked, skin removed (about 1 cup mashed)
  • 1 cup masa harina (plus more as needed)
  • ¼ teaspoon salt (optional)
  • ¼ cup warm water (adjust as needed)

INSTRUCTIONS

  1. Prepare Dough: Mash baked sweet potato and mix with masa harina and salt. Add warm water gradually until a soft, pliable dough forms. Knead briefly.
  2. Shape Tortillas: Divide into 6-8 balls. Flatten each between parchment paper using a tortilla press or rolling pin.
  3. Cook: Heat a dry skillet over medium-high heat. Cook each tortilla for 1-2 minutes per side until lightly golden.
  4. Serve: Enjoy warm with your favorite fillings!
