Tasty Sweet and White Potato Mash

Ingredients

  • ½ pound Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
  • ½ pound sweet potatoes, peeled and cut into 1 1/2-inch chunks
  • ¼ cup organic milk or nondairy milk (almond or coconut)
  • 1 tablespoon vegan/plant based butter
  • ½ teaspoon brown sugar
  • ¼ teaspoon grated fresh ginger
  • Salt and pepper to taste

Instructions

  • Bake the potatoes in the oven for approximately 30 minutes. (Option to boil them in a pot and drain.)
  • Mash the potatoes to desired consistency.
  • Place milk and vegan butter in a small saucepan until the milk is warm and the butter is almost melted.
  • Stir the milk mixture, sugar, ginger, salt and pepper into the mashed potatoes and combine.
  • Serve warm.
