Tasty Sweet and White Potato Mash
Ingredients
- ½ pound Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
- ½ pound sweet potatoes, peeled and cut into 1 1/2-inch chunks
- ¼ cup organic milk or nondairy milk (almond or coconut)
- 1 tablespoon vegan/plant based butter
- ½ teaspoon brown sugar
- ¼ teaspoon grated fresh ginger
- Salt and pepper to taste
Instructions
- Bake the potatoes in the oven for approximately 30 minutes. (Option to boil them in a pot and drain.)
- Mash the potatoes to desired consistency.
- Place milk and vegan butter in a small saucepan until the milk is warm and the butter is almost melted.
- Stir the milk mixture, sugar, ginger, salt and pepper into the mashed potatoes and combine.
- Serve warm.
