Thai Peanut Green Beans

Prepare this tasty dish as side or make extra sauce and top a salad with the warm green beans.

Ingredients

  • 1 small onion, chopped
  • 1-2 cloves garlic, minced
  • 1 lb green beans, chopped in half

Sauce:

  • 2 tablespoons nut butter
  • 2 tablespoons tamari or soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil or veggie broth
  • 1 tablespoon agave, local honey, or pure maple syrup
  • Juice of 2 limes
  • 3 cloves garlic minced
  • Optional Toppings: lime, jalapeno, peanuts,

Optional Salad Ingredients:

  • Bell pepper and/or summer squash, cut into thin strips
  • Romaine lettuce or greens of choice
  • Scallions, cilantro, sesame seeds

Instructions

  • Add all sauce ingredients together and whisk, blend, or shake in a mason jar.
  • Saute onion and garlic with veggie broth, water or olive oil until onion becomes translucent.
  • Add green beans (and any other veggie of choice). Cook for 5-7 minutes.
  • If making a salad, prepare chopped ingredients such as bell pepper, squash, lettuce, etc. and place warm green beans on top. Add more sauce or your favorite Thai salad dressing.
  • Enjoy and sprinkle on any additional toppings!
