The Best Vegan Mashed Potatoes

INGREDIENTS
- 6-8 medium yukon gold potatoes
- 4 cloves garlic – peeled & smashed
- ½ tsp sea salt + a pinch for seasoning
- 1-4 tbsp vegan butter
- 2-4 tbsp plant-based milk
- good grinding of black pepper
Optional: chives and parsley for garnish
INSTRUCTIONS
- Halve the potatoes and place them in a large pot, covering them with water by about 1 inch.
- Bring to a gentle boil over high heat, add 1 teaspoon of sea salt (adjust if altering the batch size), and cook for 25–30 minutes or until the potatoes are very tender. They should easily slide off a knife when pierced.
- While the potatoes cook, chop chives (if using) and measure out the vegan butter.
- Once the potatoes are tender, drain them and return them to the hot pot off the heat for 1 minute to let any excess moisture evaporate.
- Mash the potatoes until fluffy using a potato masher. Stir in vegan butter, plant milk, garlic, salt, and black pepper. Adjust seasonings to taste.
- Top with chives if desired, and serve plain or with your favorite gravy, enjoy!
