Tofu Musubi

INGREDIENTS
- 1 pack of tofu, or ~ 1lb
- 3 tablespoons soy sauce
- 4 tablespoons rice vinegar
- 3 tablespoons sriracha
- 3 tablespoons agave
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1 cup of sushi rice
- 2 cups water, plus more for shaping
- Rice wine or mirin for shaping, ~¼ cup
- Sushi nori, 1 pack
INSTRUCTIONS
- Combine soy sauce, rice vinegar, sriracha, agave, and spices together in a bowl to create a marinade for the tofu.
- Pat tofu dry and place in a container, pour the marinade over and let sit for at least 30 min to an hour but I suggest overnight for the best development of flavor, flip halfway through if marinade does not cover whole block.
- Cook rice according to directions and add a bit of mirin and fluff, transfer to bowl and let cool to room temperature
- Once tofu is marinated remove from marinade, save marinade, and make a sauce or use to fry tofu, slice to desired size of tofu and in a pan over medium heat add the tofu and fry until crisp about 2 min each side then set aside.
- To shape rice, combine some water and rice wine or mirin in a small bowl, dip your hands/ fingers in water solution and use your hands to shape the rice into desired shape according to size of tofu
- Once rice is formed, top with tofu and wrap with a strip of nori (use water to seal nori together)
- Top with any garnish and serve. Enjoy!
