Tomato and Asparagus Salad
Ingredients
- 1 pound asparagus trimmed and halved
- 6 cups diced tomatoes
- 1 ripe avocado diced
- 1 cup sliced basil leaves or substitute dried
- ¼ cup extra virgin olive oil or other available oil
- 2 teaspoons lemon or lime juice
- 2 teaspoons dijon mustard
- Salt and pepper to taste
Instructions
- Boil asparagus in a large pot of water for two minutes. Drain and rinse with cold water.
- Mix asparagus with remaining ingredients in large bowl, tossing to coat
Notes
Asparagus is a great source of folate, Vitamin K, Vitamin C, and Vitamin A which helps support the immune system. It also is good for helping to fight bacterial infections.
