Tomato and Asparagus Salad

Ingredients

  • 1 pound asparagus trimmed and halved
  • 6 cups diced tomatoes
  • 1 ripe avocado diced
  • 1 cup sliced basil leaves or substitute dried
  • ¼ cup extra virgin olive oil or other available oil
  • 2 teaspoons lemon or lime juice
  • 2 teaspoons dijon mustard
  • Salt and pepper to taste

Instructions

  • Boil asparagus in a large pot of water for two minutes. Drain and rinse with cold water.
  • Mix asparagus with remaining ingredients in large bowl, tossing to coat

Notes

Asparagus is a great source of folate, Vitamin K, Vitamin C, and Vitamin A which helps support the immune system. It also is good for helping to fight bacterial infections.
