Turnip Hash Browns

INGREDIENTS
- 4 medium turnips (about 2 pounds), peeled and cut into small cubes
- 2 tablespoons avocado oil or olive oil
- 1 teaspoon minced fresh rosemary or 1/3 teaspoon dried rosemary, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon finishing salt
INSTRUCTIONS
- Preheat oven 350 degrees F. Place cubed turnips on a rimmed baking sheet pan lined with parchment paper or foil.
- Drizzle avocado oil (or olive oil) and sprinkle the minced rosemary, salt, and pepper.
- Toss the turnips to coat them evenly with the avocado oil and seasonings. Distribute the turnips evenly across the sheet pan.
- Roast the turnips for 35 minutes.
- Turn them on the pan. Increase the oven temperature to 450 F. Roast for 15-20 minutes or until golden brown and tender.
