Turnip Hash Browns

INGREDIENTS

  • 4 medium turnips (about 2 pounds), peeled and cut into small cubes
  • 2 tablespoons avocado oil or olive oil
  • 1 teaspoon minced fresh rosemary or 1/3 teaspoon dried rosemary, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon finishing salt

INSTRUCTIONS

  1. Preheat oven 350 degrees F.  Place cubed turnips on a rimmed baking sheet pan lined with parchment paper or foil. 
  2. Drizzle avocado oil (or olive oil) and sprinkle the minced rosemary, salt, and pepper.  
  3. Toss the turnips to coat them evenly with the avocado oil and seasonings.  Distribute the turnips evenly across the sheet pan.
  4. Roast the turnips for 35 minutes.  
  5. Turn them on the pan.  Increase the oven temperature to 450 F. Roast for 15-20 minutes or until golden brown and tender.
