Tuscan White Bean Soup

Total Time: 35 minutes, Servings 4-6

INGREDIENTS

  • ¼ Cup Olive Oil extra virgin
  • 1 Small Onion diced
  • 2 Medium Shallots chopped
  • 4 Cloves Garlic mashed
  • 2 Carrots chopped into coins
  • 2 Celery Stalks diced
  • 3 15 Ounce Cans Cannellini Beans drained and rinsed
  • 2 Bay Leaves
  • 1 Tablespoon Italian Seasoning
  • ½ Teaspoon Red Pepper Flakes
  • 5-6 Cups Vegetable Broth
  • ½ Teaspoon Sea Salt
  • ¼ Teaspoon Ground Black Pepper
  • 3 Cups Fresh Kale or Spinach

Optional: Top with nutritional yeast or parmesan cheese!

INSTRUCTIONS

  1. Heat olive oil in a large pot over medium-low heat.
  2. Dice onion, garlic, and shallots, then sauté for 3–4 minutes until translucent.
  3. Chop carrots and celery, add to the pot, and sauté for 7–10 minutes to build flavor.
  4. Rinse and drain cannellini beans, then add them with bay leaves, Italian seasoning, red pepper flakes, vegetable broth, salt, and pepper.
  5. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  6. Remove bay leaves.
  7. Blend 2 cups of the soup until creamy, then return it to the pot and stir.
  8. Add chopped kale and cook until wilted. 
  9. Ladle the soup into a bowl and sprinkle with nutritional yeast or parmesan cheese, enjoy!
