Vegan Caesar Salad

INGREDIENTS
For Dressing:
- ½ cup hummus(store bought or homemade)
- 2 teaspoons dijon mustard
- 1 teaspoon lemon zest (optional if you want it more lemony)
- ¼ cup lemon juice
- 5 cloves garlic
- 2-3 tablespoons of capers (and 2-3 teaspoons caper juice) or sub apple cider vinegar
- 1 healthy pinch of salt and pepper
- 3 teaspoons maple syrup
- 2-3 tablespoons olive oil
- Water to thin
For Salad:
- 2 small heads of romaine, chopped
- 1 small bunch of kale, chopped
- ½ red onion, sliced
- 1 cup cherry tomatoes, cut in halves
- 2 cups croutons (store bought or homemade)
INSTRUCTIONS
- Place all dressing ingredients in a small bowl or blender, whisk or blend till well combined. Add more water till you get your desired consistency.
- In a large bowl, add the romaine, kale, red onion, tomatoes and pour the dressing over the salad. Mix until well combined and top with crunchy croutons! Enjoy!
