Vegan Gravy

INGREDIENTS
- 4 Tablespoons vegan butter
- ½ cup whole wheat flour, sifted
- 3+ cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon sage
- 1 teaspoon crushed rosemary
- Fresh ground black pepper and salt, to taste
INSTRUCTIONS
- Melt the butter in a pot or skillet over medium heat
- Add flour and stir to combine, forming a crumbly paste
- Cook for about 5-7 minutes, stirring occasionally, until the mixture starts to smell nutty
- Pour in broth / seasonings and bring to a boil, whisking constantly to combine
- Reduce heat to low and simmer for about 10 minutes, whisking frequently, until thickened
- If too thick, add more vegetable broth. If too thin, add flour and continue to cook
