Veggie Frittata Muffins

INGREDIENTS
- Olive oil cooking spray or another oil for muffin tin
- 2 cups chickpea flour
- 1 cup tightly packed chopped spinach or kale
- 2 tablespoons nutritional yeast
- 2 tablespoons lemon juice
- 1 tablespoon Italian seasoning or blend of dried oregano, parsley thyme and basil
- 1 tablespoon sunflower or avocado oil
- 1 teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon garlic powder
- 1 cup finely chopped bell pepper
- ½ cup finely chopped fresh herbs, such as basil, parsley, or thyme
- ½ cup pitted green olives, sun dried tomatoes, and/or fresh jalapenos
- ¾ cup vegan or real feta cheese
INSTRUCTIONS
- Preheat the oven to 375 degrees Fahrenheit. Lightly coat 12 cups of standard muffin tin with cooking spray.
- In a large bowl whisk together the chickpea flour, chopped spinach, nutritional yeast, lemon juice, italian seasoning, oil, salt, baking powder, baking soda, and garlic powder. Add 2 cups of water and whisk until the batter is completely smooth. Fold in the chopped bell pepper, herbs,olive mixture, and ½ cup of the feta cheese.
- Scoop about ¼ cup of the batter into each cup of the muffin tin, mixing gently between each scoops to make sure the vegetables stay well distributed in the batter. Dividing evenly, top the muffins with the remaining ¼ cup feta and a small pinch of italian seasoning.
- Bake until the muffins are set, 25-30 minutes. Let the muffins cool in pan for about 5 minutes, then gently remove and transfer to a wire rack. Serve warm or at room temperature, eat alone or with your favorite sauce. Enjoy! Note: Swap out any herbs or vegetables with what you have in the fridge!
