Veggies & Brown Rice Lettuce Taco Wrap

Ingredients

  • 2 tablespoons of veggie broth OR oil
  • 1 head of romaine or butter lettuce, can sub for tortilla
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 clove of garlic, minced
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • ½ jar of salsa, can use a fresh tomato!
  • 1 cup cooked brown rice
  • 1 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • ½ cup nutritional yeast

Toppings:

  • avocado, jalepenos, cilantro

Instructions

  • Take individual leaves of lettuce off the head, wash, and set aside.
  • In a sauté pan, cook onions, peppers and garlic in broth or oil until translucent and brown.
  • Add black beans, corn, cooked rice, salsa, spices, salt and pepper.
  • Cook until hot.
  • Scoop bean mixture into lettuce leaves, top with nutritional yeast and toppings of choice.

For the Brown Rice

  • Use 2 cups of lightly salted water for 1 cup of brown rice
  • Cook for about 45 minutes on a simmer
