Veggies & Brown Rice Lettuce Taco Wrap
Ingredients
- 2 tablespoons of veggie broth OR oil
- 1 head of romaine or butter lettuce, can sub for tortilla
- 1 onion, diced
- 1 bell pepper, diced
- 1 clove of garlic, minced
- 1 can of black beans, drained and rinsed
- 1 can of corn, drained
- ½ jar of salsa, can use a fresh tomato!
- 1 cup cooked brown rice
- 1 tsp cumin
- 2 tsp chili powder
- Salt and pepper to taste
- ½ cup nutritional yeast
Toppings:
- avocado, jalepenos, cilantro
Instructions
- Take individual leaves of lettuce off the head, wash, and set aside.
- In a sauté pan, cook onions, peppers and garlic in broth or oil until translucent and brown.
- Add black beans, corn, cooked rice, salsa, spices, salt and pepper.
- Cook until hot.
- Scoop bean mixture into lettuce leaves, top with nutritional yeast and toppings of choice.
For the Brown Rice
- Use 2 cups of lightly salted water for 1 cup of brown rice
- Cook for about 45 minutes on a simmer
