Vibrant Shaved Fennel Salad

INGREDIENTS
Dressing:
- Zest of 1 lemon
- Juice of zested lemon
- 3 teaspoons sea salt
- 1 tablespoon garlic powder
- 2 tablespoons chopped fresh (or dried) dill
- Freshly ground black pepper to taste
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon honey (or 2 tsp coconut sugar if making vegan)
- 2 tablespoons Dijon mustard
- 3 tablespoons apple cider vinegar
Salad:
- 2 medium fennel bulbs, thinly sliced
- 1 bunch kale, sliced
- 1 bunch red leaf lettuce, sliced
- 1 cucumber, cut lengthwise once – then thinly sliced
- 1 large (or 2 small) carrot, grated
INSTRUCTIONS
- In a small bowl, whisk together the lemon zest, lemon juice, salt, garlic powder, dill, black pepper, olive oil, honey, mustard, and vinegar.
- Add the thinly sliced fennel, lettuce, kale, and cucumber to a large bowl.
- Gently toss with the dressing and season to taste.
- Sprinkle with toasted nuts, parmesan cheese, or any other desired toppings (optional) and serve. Enjoy!
