Vibrant Shaved Fennel Salad

INGREDIENTS

Dressing: 

  • Zest of 1 lemon 
  • Juice of zested lemon 
  • 3 teaspoons sea salt 
  • 1 tablespoon garlic powder 
  • 2 tablespoons chopped fresh (or dried) dill 
  • Freshly ground black pepper to taste
  • 3 tablespoons extra-virgin olive oil 
  • 1 tablespoon honey (or 2 tsp coconut sugar if making vegan) 
  • 2 tablespoons Dijon mustard 
  • 3 tablespoons apple cider vinegar

Salad

  • 2 medium fennel bulbs, thinly sliced 
  • 1 bunch kale, sliced 
  • 1 bunch red leaf lettuce, sliced 
  • 1 cucumber, cut lengthwise once – then thinly sliced 
  • 1 large (or 2 small) carrot, grated 

INSTRUCTIONS

  1. In a small bowl, whisk together the lemon zest, lemon juice, salt, garlic powder, dill, black pepper, olive oil, honey, mustard, and vinegar. 
  2. Add the thinly sliced fennel, lettuce, kale, and cucumber to a large bowl.
  3. Gently toss with the dressing and season to taste. 
  4. Sprinkle with toasted nuts, parmesan cheese, or any other desired toppings (optional) and serve. Enjoy!
