Simple Sauteed Dandelion Greens

Did you know bitter foods like dandelion greens contain compounds that trigger digestive enzymes and help you derive more nutrition from your food.

Ingredients

  • 1 bunch dandelion greens tough (lower) parts of stems removed and leaves coarsely chopped
  • 2 tablespoon olive oil can substitute coconut or avocado oil
  • 1 onion halved and thinly sliced
  • 2 large garlic cloves coarsely chopped
  • Salt and freshly ground black pepper
  • Optional add ins:
  • 1/2 teaspoon crushed red pepper
  • 2 tbsp nutritional yeast

Instructions

  • Bring a large pot of slightly salted water to a boil. Add greens and cook, uncovered, 2-5 minutes.
  • Scoop out the greens with a skimmer or slotted spoon into a colander, then rinse under cold water to stop cooking.
  • Drain well, gently pressing out excess water, and transfer to a bowl.
  • Meanwhile, heat oil in a medium pot or pan over medium heat.
  • Add onions and garlic, stirring frequently until tender and fragrant, about 8 minutes.
  • Add greens and cook covered, stirring occasionally, for 5-10 minutes more. Serve warm!
