Asian Edamame Fried Rice
Ingredients
- 3 cups cooked brown rice
- 2 egg whites, scrambled (omit if following a plant based diet)
- 1 whole egg, scrambled (omit if following a plant based diet)
- 1 tbsp coconut oil, sesame oil, or veggie broth
- 1/2 medium onion, chopped
- 2 cloves garlic, diced
- ½ teaspoon fresh ginger, finely minced
- 5 scallions, chopped (whites and greens separated)
- 1/2 cup carrots, shredded
- 1 cup ready-to-eat shelled edamame (thawed if frozen)
- 2 tbsp low sodium soy sauce tamari for gluten free (or more to taste)
- salt and fresh pepper to taste
- cooking spray or veggie broth
Instructions
- Skip this step if you are following a plant-based diet: Whisk eggs and egg whites, season with salt and pepper. In a hot wok or skillet, spray a little oil and cook the eggs. When cooked, remove from pan and set aside.
- Let the wok or skillet get really hot. Add oil or veggie broth and cook onions, scallion whites, carrots, garlic and fresh ginger for about 30-60 seconds, careful not to burn.
- Add in other veggies such as peppers, snow peas, squash, etc.
- Add brown rice and stir well a few minutes to heat through.
- Optional: Add cooked egg.
- Add soy sauce, scallion greens and edamame, and mix well for about 3-4 minutes.
- Serve and enjoy!
