Avocado Brownies

Ingredients

  • 2 ripe avocados avocado peeled & pitted
  • 2 flax eggs 2 tbsp flax + 6 tbsp water
  • ¾ cup date sugar
  • ½ cup pure maple syrup honey, or agave
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla
  • cup + 2 tablespoons cocoa powder
  • ½ cup whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Optional: dark chocolate chips dried fruit, or raspberries.

Instructions

  • Preheat oven to 350 degrees F.
  • Line a pan with parchment paper or lightly coat pan with nonstick spray or oil.
  • In a bowl, place avocado, flax egg, sugar, maple syrup, coconut oil, and vanilla. Process until smooth.
  • In a separate bowl add cocoa powder, coconut/almond flour, baking soda, and salt. Process until smooth.
  • Combine ingredients of both bowls together and mix well.
  • Add optional chocolate chips, berries, dried fruit, etc.
  • Bake 25-30 minutes.
  • Allow to cool. If able cool for at least 4 hours in the fridge.
