Avocado Brownies
Ingredients
- 2 ripe avocados avocado peeled & pitted
- 2 flax eggs 2 tbsp flax + 6 tbsp water
- ¾ cup date sugar
- ½ cup pure maple syrup honey, or agave
- 3 tablespoons coconut oil
- 1 teaspoon vanilla
- ⅓ cup + 2 tablespoons cocoa powder
- ½ cup whole wheat flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- Optional: dark chocolate chips dried fruit, or raspberries.
Instructions
- Preheat oven to 350 degrees F.
- Line a pan with parchment paper or lightly coat pan with nonstick spray or oil.
- In a bowl, place avocado, flax egg, sugar, maple syrup, coconut oil, and vanilla. Process until smooth.
- In a separate bowl add cocoa powder, coconut/almond flour, baking soda, and salt. Process until smooth.
- Combine ingredients of both bowls together and mix well.
- Add optional chocolate chips, berries, dried fruit, etc.
- Bake 25-30 minutes.
- Allow to cool. If able cool for at least 4 hours in the fridge.
