Black Bean and Sweet Potato Breakfast Hash

Ingredients

  • 1 cup of chopped onion
  • 2 cloves garlic
  • 2 cups chopped/peeled sweet potatoes
  • 2 teaspoons chilli powder
  • 1 teaspoon cumin
  • cup low sodium vegetable broth
  • 1 cup cooked black beans

Optional

  • Nutritional Yeast
  • 1 cup leafy greens kale, spinach, chard, collards, turnip or beet greens. Splash of hot sauce. Chopped cilantro for garnish.
  • chopped avocado

Instructions

  • Place onions in a non stick skillet stirring occasionally for 3 minutes.
  • Add garlic and stir.
  • Add the sweet potatoes and chilli powder and stir to coat the vegetables.
  • Add broth and stir.
  • Cook for about 12 minutes stirring occasionally. Until potatoes are cooked through.
  • Add black beans and salt cook for about 2 more minutes.
  • Add the hot sauce and cilantro and serve.
