Black Bean and Sweet Potato Breakfast Hash
A savory and flavorful breakfast full of nutritious plant-based ingredients
Ingredients
- 1 cup of chopped onion
- 2 cloves garlic
- 2 cups chopped/peeled sweet potatoes
- 2 teaspoons chilli powder
- 1 teaspoon cumin
- ⅓ cup low sodium vegetable broth
- 1 cup cooked black beans
Optional
- Nutritional Yeast
- 1 cup leafy greens kale, spinach, chard, collards, turnip or beet greens. Splash of hot sauce. Chopped cilantro for garnish.

Instructions
- Place onions in a non stick skillet stirring occasionally for 3 minutes.
- Add garlic and stir.
- Add the sweet potatoes and chilli powder and stir to coat the vegetables.
- Add broth and stir.
- Cook for about 12 minutes stirring occasionally. Until potatoes are cooked through.
- Add black beans and salt cook for about 2 more minutes.
- Add the hot sauce and cilantro and serve.
