Crispy “Cheesy” Kale Chips
Ingredients
- 4 cups of kale
- 1 tbsp olive oil or another oil
- ⅕ cup cashews optional
- 1 tbsp sunflower seeds
- 2.5 tbsp nutritional yeast
- Salt & Pepper
- Dash cayenne pepper optional
Instructions
- Preheat the oven to 300 F. Mix kale and oil in a large bowl. Use hands to massage oil into kale.
- Add cashews, sunflower seeds, 1.5 tbsp nutritional yeast, salt and pepper, and cayenne pepper (optional) into the blender or food processor until it is a fine meal consistency.
- Work spice mixture into the kale. Place kale on a baking sheet (not overlapping).
- Add remaining 1 tbsp nutritional yeast to kale. Bake for 15 minutes, flip kale, return to the oven for an additional 5 minutes. Enjoy!
- Can place leftover kale into a closed container or zipped bag for 2-3 days.
Notes
Kale is packed with Vitamin K (a vitamin beneficial to blood health.) It also contains fiber which is beneficial to gut health!
