Crunchy Root Vegetable Slaw
Ingredients
- 1 rutabaga
- 3 large carrots
- 2 tsp mustard
- 4 tbsp red wine vinegar or 3 tbsp lemon juice
- 1 tbsp olive oil
- Pinch of salt and pepper
Optional add-ins:
- 1 burdock root thinly sliced or grated
- 1/4 cup raisins
- 1/4 large onion thinly sliced
- 1 radish thinly sliced or grated
- 1 tsp horseradish
- 1 tbsp honey
Instructions
- Peel rutabagas.
- In a large bowl, shave rutabagas and carrots into thin strips using a veggie peeler, cheese grater, or knife.
- Add optional veggies if using (burdock root, onion, or radish) to bowl.
- In a separate bowl, whisk together liquid ingredients until well combined.
- Add optional liquid ingredients if using (honey and horseradish) and whisk to combine.
- Toss the vegetables in the sauce and allow to absorb flavors in the fridge for at least 10 minutes.
