Crunchy Root Vegetable Slaw

Ingredients

  • 1 rutabaga
  • 3 large carrots
  • 2 tsp mustard
  • 4 tbsp red wine vinegar or 3 tbsp lemon juice
  • 1 tbsp olive oil
  • Pinch of salt and pepper

Optional add-ins:

  • 1 burdock root thinly sliced or grated
  • 1/4 cup raisins
  • 1/4 large onion thinly sliced
  • 1 radish thinly sliced or grated
  • 1 tsp horseradish
  • 1 tbsp honey

Instructions

  • Peel rutabagas.
  • In a large bowl, shave rutabagas and carrots into thin strips using a veggie peeler, cheese grater, or knife.
  • Add optional veggies if using (burdock root, onion, or radish) to bowl.
  • In a separate bowl, whisk together liquid ingredients until well combined.
  • Add optional liquid ingredients if using (honey and horseradish) and whisk to combine.
  • Toss the vegetables in the sauce and allow to absorb flavors in the fridge for at least 10 minutes.
