Easy Black Bean Tacos
Ingredients
- 1 15 oz can black beans drained and rinsed
- 1 15 oz can diced tomatoes (can use fresh)
- 2 tsp cumin or to taste
- 1 clove garlic diced or 1/2 tsp jarred diced garlic
- Fresh cilantro leaves to taste
- Flour / wheat tortillas, corn chips, OR lightly toasted sweet potato shells. You can also opt for using lettuce wraps for extra freshens!
Optional Add-Ins:
- Brown rice, quinoa, or lentils
- No Evil Foods for extra protein
Garnishes:
- Avocado
- Nutritional yeast
- Green onions
- Jalapeño
- Salsa / Pico de Gallo
- Lettuce, spinach, kale, etc.
- Cilantro
- Limes
Instructions
- Place all but the tortillas, chips or sweet potato shells in a sauce pan.
- Cook until the liquid in beans and canned tomatoes reduced enough to be used as a taco or enchilada filling.
