Ingredients

  • 1 15 oz can black beans drained and rinsed
  • 1 15 oz can diced tomatoes (can use fresh)
  • 2 tsp cumin or to taste
  • 1 clove garlic diced or 1/2 tsp jarred diced garlic
  • Fresh cilantro leaves to taste
  • Flour / wheat tortillas, corn chips, OR lightly toasted sweet potato shells. You can also opt for using lettuce wraps for extra freshens!

Optional Add-Ins:

  • Brown rice, quinoa, or lentils
  • No Evil Foods for extra protein

Garnishes:

  • Avocado
  • Nutritional yeast
  • Green onions
  • Jalapeño
  • Salsa / Pico de Gallo
  • Lettuce, spinach, kale, etc.
  • Cilantro
  • Limes

Instructions

  • Place all but the tortillas, chips or sweet potato shells in a sauce pan.
  • Cook until the liquid in beans and canned tomatoes reduced enough to be used as a taco or enchilada filling.
