Eggplant Almond Chips

Ingredients

  • 1 eggplant peeled
  • 1/4 cup almond meal ground almonds
  • 2 tablespoons nutritional yeast
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 dash black pepper
  • 1-2 teaspoons olive oil or a small amount of olive oil spray

Instructions

  • Preheat oven to 375 degrees F.
  • Cut eggplant into thin (1/4″ thick) bite-size pieces.
  • In a mixing bowl, combine almond meal, nutritional yeast, garlic powder, onion powder and pepper.
  • Lightly brush or spray eggplant pieces with olive oil and coat in almond mixture.
  • Bake for 15 minutes, flip, then bake for an additional 10 to 15 minutes or until crisp and lightly browned.
