Eggplant Almond Chips
Ingredients
- 1 eggplant peeled
- 1/4 cup almond meal ground almonds
- 2 tablespoons nutritional yeast
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 dash black pepper
- 1-2 teaspoons olive oil or a small amount of olive oil spray
Instructions
- Preheat oven to 375 degrees F.
- Cut eggplant into thin (1/4″ thick) bite-size pieces.
- In a mixing bowl, combine almond meal, nutritional yeast, garlic powder, onion powder and pepper.
- Lightly brush or spray eggplant pieces with olive oil and coat in almond mixture.
- Bake for 15 minutes, flip, then bake for an additional 10 to 15 minutes or until crisp and lightly browned.
