Garlicky Green Beans
Ingredients
- 2 pounds green beans trimmed
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons minced garlic
- 3 tablespoons minced fresh parsley or fresh basil
- 1 tablespoon chopped fresh tarragon or 2 teaspoons dried or 2 teaspoons dried
- 1/2 teaspoon salt
- Freshly ground pepper to taste
Instructions
- Bring a large pot of water to a boil. Place the beans in the boiling water for approximately 2-4 minutes.
- Remove beans immediately and run cold water over them. Blot dry with a towel.
- Just before serving, heat oil in a large skillet over medium heat. Add garlic and cook, stirring constantly, until fragrant, about 30 seconds.
- Add green beans to skillet and stir. Add parsley, tarragon, salt and pepper and cook, stirring, until heated through, 1 to 3 minutes.
- Serve immediately and enjoy!
