Garlicky Green Beans

Ingredients

  • 2 pounds green beans trimmed
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons minced garlic
  • 3 tablespoons minced fresh parsley or fresh basil
  • 1 tablespoon chopped fresh tarragon or 2 teaspoons dried or 2 teaspoons dried
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste

Instructions

  • Bring a large pot of water to a boil. Place the beans in the boiling water for approximately 2-4 minutes.
  • Remove beans immediately and run cold water over them. Blot dry with a towel.
  • Just before serving, heat oil in a large skillet over medium heat. Add garlic and cook, stirring constantly, until fragrant, about 30 seconds.
  • Add green beans to skillet and stir. Add parsley, tarragon, salt and pepper and cook, stirring, until heated through, 1 to 3 minutes.
  • Serve immediately and enjoy!
