Gingery Garlic Squash and Okra Saute

Ingredients

  • 2 zucchini, sliced
  • 2 yellow squash, sliced
  • ½ cup okra, sliced into quarter size rounds
  • 3 cloves garlic, minced
  • ½ onion, diced
  • 1 inch fresh garlic grated or chopped
  • 2 tablespoon soy sauce or tamari
  • Salt and pepper to taste
  • Optional: olive oil, vegetable broth, or water to saute veggies

Instructions

  • Add water, vegetable broth, or cold-pressed extra virgin olive oil to a skillet. Saute garlic, ginger and onion on medium-high heat for 5 minutes or until onion becomes translucent.
  • Add squash and okra. Cook for 7-10 minutes or until soft.
  • Add soy sauce or tamari, salt and pepper to taste. Enjoy!
