Gingery Garlic Squash and Okra Saute
Ingredients
- 2 zucchini, sliced
- 2 yellow squash, sliced
- ½ cup okra, sliced into quarter size rounds
- 3 cloves garlic, minced
- ½ onion, diced
- 1 inch fresh garlic grated or chopped
- 2 tablespoon soy sauce or tamari
- Salt and pepper to taste
- Optional: olive oil, vegetable broth, or water to saute veggies
Instructions
- Add water, vegetable broth, or cold-pressed extra virgin olive oil to a skillet. Saute garlic, ginger and onion on medium-high heat for 5 minutes or until onion becomes translucent.
- Add squash and okra. Cook for 7-10 minutes or until soft.
- Add soy sauce or tamari, salt and pepper to taste. Enjoy!
