Healthy Coleslaw
Ingredients
- ½ head of green cabbage shredded
- ½ head purple cabbage shredded
- 2 or 3 carrots shredded
- ½ red onion sliced thin
- ½ cup coconut milk or other plant milk (oat, soy, rice, almond, etc)
- 3 tablespoons apple cider vinegar
- 1 teaspoon honey
- ¼ teaspoon salt
- ½ teaspoon pepper
Instructions
- Put all the shredded vegetable into a large bowl.
- In a separate bowl mix plant milk, honey, vinegar, salt and pepper.
- Pour the dressing onto the cabbage mixture and toss until the cabbage is well coated. Option to massage with hands. Allow to marinate in the fridge for a few hours if you have the option (the longer the flavors are together, the tastier it often is!) Enjoy!.
Notes
Cabbage is high in Vitamin K, Vitamin C and fiber! It promotes gut health and supports the immune system.
