Healthy Cornbread

Total Time: 30 minutes  Servings: 16 squares

INGREDIENTS

  • 1 cup whole wheat  flour
  • 1 cup cornmeal
  • ¼ cup date sugar or natural sweetener ( PURE maple syrup, honey) 
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1  cup unsweetened coconut or almond milk 
  • 1 eggs, beaten OR 1 tablespoon flax seed (ground) to 3 tablespoon water 
  • ½ cup corn kernel( fresh, frozen or canned)

OPTIONAL : ¼ cup melted coconut oil 

INSTRUCTIONS

  1. Preheat oven to 400 degrees. Lightly grease an 8×8 baking pan. 
  2. In a large bowl, mix flour, cornmeal, date sugar, baking soda and powder, and salt.  Stir in  non dairy milk,  and eggs (or substitute).  Do not overmix…stir only until blended.  Add in corn and oil if using . 
  3.  Pour batter into prepared pan.  Bake in preheated oven for 20-25 minutes or until center of the bread springs back when gently pressed.
