Kale Chickpea Hash

Ingredients

  • 3 tablespoon garlic cut into small pieces
  • 1 small red onion cut into small pieces
  • 1 bunch kale
  • 2 cans drained and rinsed chickpeas
  • 2 tablespoons Bragg Liquid Aminos or soy sauce tamari
  • 2 tablespoons olive oil or coconut oil
  • ½ tsp fresh or dried thyme
  • Salt to taste

Instructions

  • Gently fry the onion and minced garlic in coconut oil over medium-high heat until it turns golden brown.
  • Add the washed and drained kale . After the kale wilts a bit, add the chickpeas and cook for about 6 minutes.
  • Add the remaining ingredients and stir.
  • Begin mashing the chickpeas with a fork. You can mash them as fine as you like.

NUTRITION NUGGET: Kale, related to cabbage, is high in plant compounds that help protect against cancer. Garbanzo beans (chickpeas) are high in fiber which makes you feel fuller faster and will not raise blood sugar.
