Orange Peanut Stir Fry

Ingredients

  • ½ head of cabbage or other greens
  • 2 – 3 clementines or other type of orange
  • 6 – 8 green onions
  • 1 Tbsp fresh minced ginger
  • 1 Tbsp fresh minced garlic
  • 1 pinch coriander
  • 1 Tablespoon sesame seeds optional

SAUCE:

  • 2 tablespoons peanut butter or another nut butter or tahini
  • Juice of 1 lime
  • 3 tablespoons tamari
  • 1 tablespoon rice wine vinegar or lemon juice
  • 2 Tablespoons sesame oil or other available oil
  • Salt + pepper to taste
  • *Use other half of cabbage for cabbage wrap*

Instructions

  • DIRECTIONS:
  • Put a large skillet on high heat, and add sesame oil, cabbage, and green onions.
  • Saute until tender. Add remaining ingredients, and saute on high heat for a remaining 1 – 3 minutes. Let simmer.
  • Add sauce. Serve with optional brown rice or quinoa and add into cabbage wrap.

Notes
