Pineapple Salsa with Black Beans and Corn (by Lyric)
This salsa can be made raw or cooked.
Ingredients
- ½ cup diced onion
- 2 cloves garlic
- ½ cup diced pineapple
- ½ cup diced or canned tomato
- 1 bell pepper cut into strips
- 1 can black beans rinsed optional
- 1 can corn kernels (rinsed)
- 1 tablespoon cumin
- ½ tablespoon chili powder
- Salt & Pepper to taste
- ¼ cup cilantro
- 1 lime, juiced
- Optional: jalapeno, avocado, nutritional yeast
- Wrap in hydroponic lettuce romaine lettuce or cabbage.
Instructions
Raw version:
- Simply add all ingredients to a bowl and mix!
Cooked version:
- Saute garlic and onion on a skillet. Once onions become translucent (3-5 minutes) add pineapple and bell pepper. Cook for another 5-7 minutes.
- Lastly, add black beans. Mix in spices.
- Top with cilantro, lime juice, and diced tomato.
- Serve in a lettuce wrap.
