Pineapple Salsa with Black Beans and Corn (by Lyric)

This salsa can be made raw or cooked.

Ingredients

  • ½ cup diced onion
  • 2 cloves garlic
  • ½ cup diced pineapple
  • ½ cup diced or canned tomato
  • 1 bell pepper cut into strips
  • 1 can black beans rinsed optional
  • 1 can corn kernels (rinsed)
  • 1 tablespoon cumin
  • ½ tablespoon chili powder
  • Salt & Pepper to taste
  • ¼ cup cilantro
  • 1 lime, juiced
  • Optional: jalapeno, avocado, nutritional yeast
  • Wrap in hydroponic lettuce romaine lettuce or cabbage.

Instructions

Raw version:

  • Simply add all ingredients to a bowl and mix!

Cooked version:

  • Saute garlic and onion on a skillet. Once onions become translucent (3-5 minutes) add pineapple and bell pepper. Cook for another 5-7 minutes.
  • Lastly, add black beans. Mix in spices.
  • Top with cilantro, lime juice, and diced tomato.
  • Serve in a lettuce wrap.
