Pineapple Tacos
Ingredients
- ½ cup diced onion
- 2 cloves garlic
- ½ cup diced pineapple
- ½ cup diced or canned tomato
- 1 bell pepper cut into strips
- 1 can black beans rinsed
- 1 Tablespoon cumin
- ½ tablespoon chili powder
- Salt & Pepper to taste
- ¼ cup cilantro
- Juice of 1 lime
- Optional: roasted corn ½ cup diced tomato
- jalapeno avocado, nutritional yeast
- **Wrap in hydroponic lettuce romaine lettuce, or cabbage!**
Instructions
- Saute garlic and onion on a skillet. Once onions become translucent (3-5 minutes) add pineapple and bell pepper.
- Cook for another 5-7 minutes. Lastly, add black beans. Mix in spices.
- Top with cilantro, lime juice, and diced tomato.
