Quinoa Omelette Breakfast Bites
Make these omelete bites ahead of time for a quick to-go recipe!
Ingredients
- 1 cup quinoa cooked
- ½ cup shredded cheese cheddar, mozzarella, colby jack…
- 2 eggs or vegan egg substitute
- 1 clove garlic minced
- salt and pepper to taste
- ½ teaspoon oregano
- 1 large handful spinach or kale chopped
- 1 medium tomato diced
Instructions
- Preheat oven to 350 degrees and grease mini muffin tin with olive oil or choice of cooking spray.
- In a medium bowl, mix together the warm quinoa with the shredded cheese to melt the cheese. Add the eggs, garlic, salt, pepper, oregano and veggies, Mix to combine.
- Spoon into mini muffin tin, filling each to the top. Bake for 20 minutes.
- Remove from the oven and let cool for 10 minutes. Run a knife around the edges to loosen and then pop out and enjoy!
