Quinoa Tabbouleh
Ingredients
- 1 cup quinoa rinsed
- 1 ¼ cup water
- 2 tbsp lemon juice
- 1 tsp garlic minced
- ½ cup olive oil
- 2 small cucumbers cut into ¼ inch pieces
- 1 pint cherry tomatoes halved
- ⅔ cup parsley roughly chopped
- ½ cup fresh mint roughly chopped
- 1 small onion diced
- Salt and pepper to taste
Instructions
- Combine quinoa, water, and a pinch of salt in a medium saucepan. Bring to a boil on high heat. Reduce heat to medium-low, cover, and simmer for 10 minutes. Remove from heat and allow to cool. Fluf with a fork
- While the quinoa cooks, combine the lemon juice, garlic, and olive oil in a small bowl. Season with salt and pepper.
- Add the cucumbers, tomatoes, herbs, onion, and dressing to the quinoa. Toss to combine.
Notes
Quinoa is a filling grain loaded with nutrients. It’s high in fiber and protein, and contains the essential amino acids. It’s also great for people with gluten intolerance!
