Quinoa Tabbouleh

Ingredients

  • 1 cup quinoa rinsed
  • 1 ¼ cup water
  • 2 tbsp lemon juice
  • 1 tsp garlic minced
  • ½ cup olive oil
  • 2 small cucumbers cut into ¼ inch pieces
  • 1 pint cherry tomatoes halved
  • cup parsley roughly chopped
  • ½ cup fresh mint roughly chopped
  • 1 small onion diced
  • Salt and pepper to taste

Instructions

  • Combine quinoa, water, and a pinch of salt in a medium saucepan. Bring to a boil on high heat. Reduce heat to medium-low, cover, and simmer for 10 minutes. Remove from heat and allow to cool. Fluf with a fork
  • While the quinoa cooks, combine the lemon juice, garlic, and olive oil in a small bowl. Season with salt and pepper.
  • Add the cucumbers, tomatoes, herbs, onion, and dressing to the quinoa. Toss to combine.

Notes

Quinoa is a filling grain loaded with nutrients. It’s high in fiber and protein, and contains the essential amino acids. It’s also great for people with gluten intolerance!
