Roasted Tomato Pesto

Ingredients

  • 1 cup tomato chopped
  • 1 teaspoon extra virgin olive oil
  • ¼ cup sliced almonds can sub with sunflower seeds, sesame seeds, or chickpeas
  • ½ cup chopped basil
  • 3 cloves garlic
  • Salt to taste

Instructions

  • Roast chopped tomatoes on 350 degrees for 20 minutes (drizzle optional olive oil)
  • Put all ingredients into a blender and blend! Taste and add more for desired flavor / consistency!
  • Serve with spaghetti squash, whole grain pasta, roasted veggies, spread on a sandwich, and more!
