Roasted Tomato Pesto
Ingredients
- 1 cup tomato chopped
- 1 teaspoon extra virgin olive oil
- ¼ cup sliced almonds can sub with sunflower seeds, sesame seeds, or chickpeas
- ½ cup chopped basil
- 3 cloves garlic
- Salt to taste
Instructions
- Roast chopped tomatoes on 350 degrees for 20 minutes (drizzle optional olive oil)
- Put all ingredients into a blender and blend! Taste and add more for desired flavor / consistency!
- Serve with spaghetti squash, whole grain pasta, roasted veggies, spread on a sandwich, and more!
