Thai Peanut Green Beans
Prepare this tasty dish as side or make extra sauce and top a salad with the warm green beans.
Ingredients
- 1 small onion, chopped
- 1-2 cloves garlic, minced
- 1 lb green beans, chopped in half
Sauce:
- 2 tablespoons nut butter
- 2 tablespoons tamari or soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons sesame oil or veggie broth
- 1 tablespoon agave, local honey, or pure maple syrup
- Juice of 2 limes
- 3 cloves garlic minced
- Optional Toppings: lime, jalapeno, peanuts,
Optional Salad Ingredients:
- Bell pepper and/or summer squash, cut into thin strips
- Romaine lettuce or greens of choice
- Scallions, cilantro, sesame seeds
Instructions
- Add all sauce ingredients together and whisk, blend, or shake in a mason jar.
- Saute onion and garlic with veggie broth, water or olive oil until onion becomes translucent.
- Add green beans (and any other veggie of choice). Cook for 5-7 minutes.
- If making a salad, prepare chopped ingredients such as bell pepper, squash, lettuce, etc. and place warm green beans on top. Add more sauce or your favorite Thai salad dressing.
- Enjoy and sprinkle on any additional toppings!
