Ingredients

  • ¼ cup peanut butter (for a healthier version look for no sugar and no salt added)
  • ¼ cup honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon sea salt
  • 4 cups rolled oats
  • 1 tablespoon cinnamon optional
  • 1 teaspoon nutmeg optional

Instructions

  • Preheat oven to 300 degree F.
  • Line a large baking sheet with parchment paper.
  • Place the peanut butter, honey/maple syrup, vanilla, sea salt, and ½ cup water in a blender. Process until smooth and creamy.
  • Place the oats in a large bowl and pour the peanut butter mixture over them. Mix until the oats are well coated. Spread the mixture evenly over the parchment lined baking sheet
  • Bake until the oats are dry to the touch and lightly browned, stirring occasionally, approximately 40 to 50 minutes.
  • Turn oven off and leave the granola in the oven until cooled completely. Enjoy!

Notes

Store granola in an airtight container at room temperature for up to 10 days.
