Tofu Scramble with Leafy Greens

Ingredients

  • 1 package of firm tofu preferably organic**
  • Half a medium sized onion cut in thin slices lengthways
  • 1 garlic clove minced
  • 1 handful of either kale english or baby spinach (as much as you like, coresly chopped)
  • 1 tbsp of extra virgin olive oil or coconut oil
  • 2 tbsp of Tamari sauce or low sodium soy sauce
  • Pinch of cayenne pepper or less if you don’t like spicy food
  • Pinch of pepper
  • 1 tsp of turmeric powder
  • ADD INS: Nutritional Yeast other veggies like mushrooms, tomatoes, peppers, cumin
  • TOPPINGS: Avocado chopped scallion, toasted sesame seeds, hot sauce

Instructions

  • Crumble the tofu into small chunks and into a large bowl.
  • Add all ingredients to the crumbled tofu and mix well.
  • Transfer ingredients onto skillet and heat skillet to medium heat.
  • Cook until warmed and thoroughly mixed.
